3 cups cornflakes
1 pkg Williams Chipotle Chili Seasoning
1/4 cup mayonnaise, more if needed
6 boneless, skinless chicken breasts
Heat oven to 375° F. Spray a foil-lined shallow baking pan with cooking spray.
Place cornflakes in food processor and crush into fine crumbs. Add seasoning and pulse to blend. Pour into a shallow dish.
Brush mayonnaise on both sides of chicken and then roll in crumb mixture, coating well. Place chicken in a single layer on prepared pan. Bake 15 to 20 minutes or until chicken is done, no longer pink inside, and meat thermometer registers 170° F.
