These meatloaf muffins use Williams Meatloaf Seasoning with ground beef and breadcrumbs in muffin tins for perfectly portioned individual servings that cook faster and more evenly than traditional meatloaf. The meatloaf seasoning provides classic homestyle flavor while the muffin format ensures perfect portions and even cooking every time.

Preheat oven to 425°F.
Lightly grease a 12-cup muffin tin with cooking spray.
Combine ground beef, onion, water, egg and Williams Meatloaf Seasoning in a large bowl.
Divide mixture evenly into each muffin cup.
Combine ketchup, brown sugar and vinegar in a small bowl and evenly spread over each muffin.
Bake for about 25 minutes or until an internal temperature of 160°F has been reached.
Meanwhile, prepare mashed potatoes and set aside.
Top each muffin with a dollop of mashed potatoes.
Garnish with chives and serve.
