Take a traditional Mexican recipe and give it a Williams twist by enliving with any of our many Taco Seasonings. Zest it up by adding any fresh garnish such as cilantro, jalapeno, or even queso.
1 large red onion
1 green bell pepper, cut into strips
1 lean beef chuck roast (about 2 to 3 lbs)
1 tsp salt, or to taste
1 pkg Williams Chipotle Chili Seasoning
1 can whole berry cranberry sauce (16 oz)
1/2 cup orange juice
3 cups hot, cooked brown or white rice
1/4 cup chopped cilantro
3 tbsp chopped green onion
Place onion and pepper strips in a 4-quart slow cooker. Place beef on top of vegetables. Sprinkle with salt and Williams Chipotle Chili Seasoning. Combine cranberry sauce and orange juice and pour over meat. Cover and cook on low setting until meat is tender and done, about 7 to 9 hours.
Stir together hot rice, cilantro and green onion. Serve slices of beef with rice and spoon sauce over both.
